PEPPER
Piper dioica
This tree is cultivated in the central and southern part of Mexico (states of Veracruz, Puebla and Oaxaca). It is generally associated with coffee, cocoa and vanilla, as it offers adequate shade, and helps to respect the environment and a sustainable agroforestry system.

Characteristics
Origin: Mesoamerica.

Smell: It is intense and its notes are reminiscent of pepper, kitchen cloves with a touch of nutmeg and cinnamon, spicy and smooth.

Producers: Pepper is worked by different groups of producers gathered in cooperatives. A total of 300 families participate in its production and transformation.

QUALITIES
FAQ: dried berries less than 10 mm in diameter, without leaves, with less than 4% impurity. Coffee or dark brown color.
ASTA: dried berries less than 10 mm in size with less than 2% impurity. Coffee color, dark brown.

CONSERVATION
In a dry and cool place, without extreme temperature change. Once opened, it is recommended not to refrigerate it.
